Beautiful soup. One variation you might like to try (if I can be so bold) is to add the miso paste at the end. Miso is a live culture and boiling will destroy it. Adding it at the end will retain the culture. I agree with you - miso is wonderful.

tofu has become regular in our kitchen and i have been using it in almost every possible dish i feel it fits;) lovely pic as usual sug... never tried udon noodles...

I saw Udon Noodles lat week in the store, so plump.aren't they? Haven;t cooked with it yet. Great combo with Tofu. Loved the salad too, Buddhas hand giving you great ideas!:)
