Mushroom - Biscuit Dough Sandwich
Sandwiches/wraps are mostly made with bread, pitas, roti or tortillas. But when I didn’t have any of these and still wanted to make a sandwich, my creativity kicked in, out of desperation (as always!). I made a sandwich out of biscuit dough, not sweet ones, but country-style biscuits that can be found in the refrigerator section.
I don’t buy biscuit dough often. But on those days when you are dog tired and all you want is a hot bowl of soup and good bread to dunk in, these come in handy. Since I already use them as bread, I decided to experiment them in a sandwich. And it definitely worked. This is a convenient meal when you want to put together with what you have on hand. Any spicy left-over vegetables from your refrigerator would also work here.
Oyster mushrooms and biscuit dough.
I have used oyster mushrooms which cook fast. If you are using any other type of mushrooms, I would recommend sautéing the mushrooms first, followed by onions and tomato, like I did in Mushroom Masala.
Ingredients
Biscuit dough – 1 can
Oyster mushrooms – 1 pack, sliced
Onion – 1, sliced
Tomato – 2, sliced
Ginger – 1 inch piece, finely chopped
Garlic – 3 cloves
Cumin seeds – ½ tsp
Red chilli powder – 1 tsp
Garam masala powder – ½ tsp
Turmeric powder – ¼ tsp
Salt
Oil
Method
Preheat the oven according to the directions in the biscuit dough package.
In a pan, heat a tsp of oil and splutter cumin seeds. Add onions, ginger and garlic. When onions become soft, add tomatoes, mushrooms and all the dry powders with salt. Cook until mushrooms are soft and everything comes together. Allow this to cool a bit.
Coat a non-stick baking pan with oil. Take eight biscuits from the package and flatten them by your hands by pulling the edges. Flatten them till they are large enough to hold the filling. Lay them on the cutting board, and place filling on four of the biscuits. Top with the remaining four biscuits. Stretch and pinch the corners to seal them properly. Place them on the baking pan and bake for the time specified in the package.
Allow them to cool for two minutes and serve warm.

Though I don't eat mushrooms, the picture is so tempting that I have to give it a try. May be with some other vegetable.

That picture of mushrooms is a classic, Suganya! Quite a hearty recipe here, it tempts me to buy the biscuit dough :).
I liked the dish though I don't eat mushrooms. I can use vegetables of my choice. Can you please include the recipe for home made biscuit dough.

i've toyed with the idea of using biscuit dough, but all the breads i see seem to have transfats. do you know of a brand that doesn't?
Biscuit dough thats interesting i never have tried nor do i know whether we get it. its sure looks great with the mushroom filling. :)

Bee, I don't buy biscuit dough very often for the very same fact. Moderation is the key. I have hardly seen any brands other than Pillsbury in stores, so not much of an option there!

That looks yummy Suganya ! I made something similar by using a basic tomato-onion filling in some home made bread dough and baking it. We used to get these in local bakeries in Hyd. Come school closing time and the smell wafting from these bakeries en route to home would be too enticing to ignore :)

Have you tried sauteeing oyster mushrooms in a little oil and seasoning with just salt & pepper? it tastes awesome.

'Shroom pockets, Suganya, are a great, quick idea. It "might" be possible to get dough w/o trans fats at a health food store, but you can make your own dough w/ butter (far less damning). Of course, there goes the convenience factor...

Tee, I have not tried that. They are so mellow, salt and pepper should work fine. I will try that sometime.
